Sorry, I've been lazy about posting this week. Here's one from a few days ago. This is a recipe courtesy of mom. I had some leftover zucchini after making some zucchini-ricotta fritters, and bread is always a good way to use it up...
It also freezes well, so I make mini loaves and can defrost them as needed.
I sub-ed out the vegetable oil with apple sauce, but kept the sugar as is, so only mildly healthier.
Put some butter on a warm slice and it's great for breakfast. Or any meal.
